Chocolate Lava Cakes

***note - this is not the actual lava cake I made, but I forgot to take a picture, and these were presented so much better than mine.***

My Friend Kelly at work gave me this recipe for Chocolate Lava Cakes. They are very easy to make and delicious!

4 T. Butter plus (room temp.) 1 T. to grease the muffin tins
1/3 c. sugar and more for tins
3 lg. eggs
1/3 c. flour
1/4 t. salt
8 oz. semi-sweet chocolate chips (melt this in the microwave in 20 second intervals until fully melted)
Preheat oven to 400 degrees
1. generously butter tins, sprinkle w/sugar and tap off excess
2. In bowl, cream butter and sugar until light and fluffy
3. add eggs one at a time, beating well after each addition
4. with mixer on low, beat in flour and salt until just combined, scraping down sides as needed
5. fold in chocolate (melted in 20 second intervals in microwave)
6. divide batter among 6-8 muffin cups.
bake just until tops are set** (9-11 minutes)
**This is the most important part. As soon as the tops are set, it’s done. It won’t look like a cupcake or anything. It should ooze chocolate when you cut into it.

NOTES: She suggested making your own whip cream to serve with it. I just served it with a little cool whip and/or ice cream whatever you prefer.
